Molletes


 This is a simple yet satisfying breakfast, although it can also be made for dinner.

Serves 4

Ingredients: baguette (1 large), refried beans (a can, about 250 grams), cheddar cheese (200 grams), salsa verde or salsa roja (to taste).

Instructions: preheat oven to 190˚C.

Slice the baguette in half, then cut the halves into desired size (usually about 10 cm). Remove the centre of the bread (the meat of the bread).

Spread the refried beans onto the slices of baguette. Top with cheddar cheese. Pop into the oven for about 10 minutes, or until the cheese browns a little bit.

Serve immediately, topping with sauce of your choice. Enjoy!
