Huevos a la mexicana

Ingredients: eggs (3), tomatoes (2), onion (1/4), tortillas (2)

Instructions: finely chop the tomatoes, onion. Cut the tortilla into small rectangles.

In a small bowl, beat the eggs. Add a little milk of desired.

In a pan, add a little oil. Add the cut tortillas, cooking until browned. Tip in the chopped onion, then the tomatoes. Cook for about 3 mins, or until the tomatoes are slightly wilted.

Pour in the egg mixture, cooking until desired consistency is achieved.
