Sopa de fideo en caldo de frijol (“Noodle soup in bean broth”)


A great comfort food, this noodle and bean soup is simple yet filling. Top with cheese, soured cream and coriander if desired.

Ingredients: bean broth (1L give or take), tomatoes (2), small onion, oil, vermicilli pasta nests (500 g), chicken or vegetable cube (1), water.

Toppings: cheddar cheese, soured cream, avocados, coriander to taste.

Instructions: in a large saucepan, heat around 2 tablespoons of oil. Fry the chopped onion and pasta nests until golden.

Next, take out the pasta from the pan and fry the blended tomatoes. Add the salt, bean broth and vegetable or chicken cube.

Season with salt and pepper to taste.

Add the pasta nests and onion, cook until ready.
